I’m talking about people like Spinoza or Nietzche, or maybe even Whitman. I’ve tried searching for this and can’t seem to find any sort of comprehensive list. Thanks all.

Well, a good start is the Wikipedia list, though it’s incomplete. One of my favourites not on the list is Iain M. Banks – as is one of my least favourites, Irvine Welsh. (Even though I’m Scottish, I found Trainspotting unreadable.)
Any names you find on lists will inevitably include only those authors who have spoken about it. Not all authors choose to bring it up. It’s not like there’s a master “atheist list” out there for examination.
